Marrow has been a highly prized food since humans first learned to use tools to break bones, and today it's part of gourmet dishes in virtually every culture around the world. Famed examples include ossobuco from Italy, and pot-au-feu from France.
In the United States, it's typically found in gourmet restaurants or in the homes of culinary enthusiasts. Once, a New York chef showcased our grass-fed beef for a group of Wall Street investors, and his five-course dinner included marrow butter on toast as part of an appetizer, resulting in rave reviews.
This classic dish is the simplest preparation, but marrow is also an ingredient in many broths and pemmican recipes and of course, it's a classic part of the Paleo diet.
