Roasted Beef Marrow Bones

Roasted Beef Marrow Bones

“If you haven’t made roasted marrow bones yet, stop what you’re doing, find a local farmer who is pasture-raising cows on 100% grass, and get some bones. You won’t believe how easy it is to enjoy this gourmet super-food at home. Your great grandmother would be so proud!” Sanfilippo, Diane. Practical Paleo. Victory Belt Publishing, Inc. 2012. Page 288

Directions

Ingredients

  • Beef marrow bones
  • Sea salt
  • Pepper

Directions

Congratulations!  You have already completed the first step: you have purchased a package of beef bones from Lick Skillet Farm, farmers who pasture-raise cows on 100% grass!

Preheat oven to 450 degrees.

Season with sea salt and freshly cracked black peppercorns, to taste.

Place the bones –  marrow-side-up your bones are canoe-cut – in a cast iron skillet or a shallow roasting pan. Roast for 30 minutes or until the bones and marrow are golden brown.

Then, you have two options: scoop out the roasted marrow with a spoon and 1) eat immediately or 2) transfer to a skillet, add finely chopped mushrooms and make flavored butter!
